My class enjoyed the game Switch It using our alphabet letters to build simple CVC words and then later long vowel words. "Pet"...students used letters to make the word on their desk. It is a simple and quick way to see how students perform as you walk around the room. Students are listening and actively looking for letters to put together. Teacher can simply correct if needed. "Now...Switch the P to M and make Met!" You can make it harder by saying things like "Make a word that rhymes with pet..." There would be a variety of thoughts. It may offer time to talk again about "Nonsense words" (not a real word with a real meaning but fun to say!)
This is the same idea...just using phonics rules to build harder words! It would be a challenge for higher level learners and good practice for medium to low level. Do this activity as a classroom review and then students can do this practice activity as partners or individuals.
